pinch of salt, pinch of garlic powder, pinch of ground pepper, hint of cayenne pepper. slice breasts into thin strips, then grill. (pag meron kang oregano or rosemary mas maganda - tawag dito eh jerk chicken)
crushed garlic, vinegar, tbsp of soy sauce and three calamansi. flatten breasts then marinate for an hour or overnight. get annatto seeds, a cup of extra virgin olive oil or just plain olive oil (pakuluan mo ang achuete/annatto hanggang sa maging reddish yung oil, then remove the seeds.). grill and pahid lang ng achuete/annatto oil. - this is called inasal.
pomegranate juice or grape juice, pinch of salt, pepper and parsley. non-enriched flour (para hindi mag-rise). bread the chicken lightly with flour, tapos sear mo lang ng 1 minute each side. marinade for an hour or overnight. then bake for 25 minutes on a 375 degree oven. lightly oil the pan kung saan mo ilalagay yung chicken para hindi dumikit. - this is my version of coq au van.
