What style of music are you looking for?  Each one has very different methods of recording, mixing and mastering.

I like the remastered Aerosmith Big Ones, and Get A Grip.

Van Halen:
-Van Halen
-Carnal Knowledge
-Balance

U2
-All That You Can't Leave Behind

Eagles
-Hell Freezes Over (acoustic, but still a good mix)

Another good source, is to check out the 'test CDs' of high end sound systems.  The artists and songs they put on these CDs are usually recorded REALLY well (some songs are crap, but the recording and production are top-notch) since they're meant to show-off the detail and clarity of these audiophile systems
