"Rolloff" in theory means a signal starts cut off frequencies lower or higher than a given rolloff frequency. In a 2-way crossover for example, the signals are split into two signals, one of which going to a subwoofer, which starts to roll off at say, 2KHz, meaning all the frequencies beyond 2KHz start to lose gain (or consider it a cutoff point for frequencies beyond 2KHz). Then, the other signal goes to a midrange/tweeter. Usually, the high frequency rolloff of the woofer signal is the low frequency rolloff of a midrange/tweeter signal. So that means, all frequencies lower than 2 KHz roll off. Another term used for this is low shelving or high shelving. Some others use the terms, "high pass" or "low pass".
